Tasty Tomato Pie

We are enjoying a bountiful crop of tomatoes right now. I have made squash pie, so I thought I would make a variation using tomatoes. Ok...a big variation because it has none of the ingredients in my squash pie. Except pie crust.

This is super easy! I tested it out on guests last night to see if they liked it before I would share it with you.

Shopping list:

Parmesan Cheese (I had this leftover bag, I used grated last time and just as good)
Shredded cheddar
Mayo
Tomatoes
Pie crust

I will make this short and sweet....just follow along.

Slice your tomatoes and place them on a paper towel to drain.  

Slurp! Eat a few....it's ok.


I like to bake my pie crust for a little bit before I put in my 'maters. 

Poke a few holes in it before you bake it.


Your tomatoes are draining and your pie crust is baking.


Now, pull out your spices. Here is my secret. I promise this is what makes it sooooo tasty!

 Spice list:


Onion powder (a way to sneak in onion flavor without seeing onions)
Dill weed
Seasoned salt


I would like to pause for a minute to tell you something.


I LOVE DILL WEED!

Add it to your salads. Add it to a recipe. It is an awesome flavor addition.

Let's work on the filling. Take a 3/4 cup of mayo and add in seasoned salt, onion powder and I use a HEALTHY teaspoon of dill weed.



Then I sprinkle in more. Then I sprinkle some on my tomatoes. Then I do a dill weed dance.


Add in a cup of shredded cheddar and about 1/4 cup of grated parmesan.


Mix it up with the dill weed and mayo mixture.

Pull out your LIGHTLY baked pie crust.


Layer in your drained tomatoes.


 Then sprinkle on more dill weed. If you wanna'.....Salt and pepper wouldn't hurt either.


Spread your mayo/cheesy/dill weed layer on top.




Then bake on 350 for about 25 minutes. Take it out when it looks like this.......


And I promise....the tomatoes are soooo tasty with the dill! So fresh and summery!




If you would like a little thicker filling. Add in a teaspoon or two of cornstarch. It will be a little more pudding'ish.

This is such a burst of flavor. 

A burst, I tell ya'.

  2. I was just thinking that I needed to make a tomato pie. I've never put dill weed in mine, but I'm going to try your recipe. I usually spread a little mustard on top of the crust. It helps seal out the liquid and gives the tomato pie a great flavor!

  3. Does the crust get soggy? I would think all those juicy tomoatoes would sog it up.

    1. The bottom crust isn't soggy but it isn't firm like the edges. Leaving your tomatoes to drain on a paper towel first really helps. I also used a ton of tomatoes. Use less and still get the flavor but less juice. Try it and tell me what you think. You HAVE to use the dill though....deal? ; ) miss ya! Love, Me

  4. I can't wait to try this! My mother-in-law & I were just talking about trying a tomato pie the other day. I wonder if it would be good with grape tomatoes? She brought me a mess of them the other day!

  6. I make sweet Green Tomato Pies! They're absolutely amazing and are a great way to use up green tomatoes at the end of the year. If you don't tell anyone what is in it, I guarantee they'll think it's apple pie!!!
